palak panir

I made palak panir for dinner tonight. The panir was homemade; I whipped it up a few days ago when my milk was about to turn. I made a paste of random stuff (cumin, coriander, garlicks, cloves, tumeric, cinnamon, black papper, crushed red pepper) for seasoning as I did not have exactly the things I wanted so why not experiment.
It turned out alright, but not good enough to put in the cookbook. I fried the panir first, which I do not usually do, and the texture was very interesting. Unfortunately, I curdled the cheese with lime juice, and I used a bit too much, so it tasted kinda funky. Maybe I should’ve used the panir in some faux-island/carribean dish instead (an intriguing idea, actually). I wanted the spinach substrate to be creamier, too, but I did not have any cream or cottage cheese to use… milk did not work.
So, maybe palak panir is a bad name for it… spicy spinach with fried cheese would be more descriptive. It does not sound as cool, tho.
I suppose I should eat as much indian inspired food as possible now as Amanda will probably not want to have any for a while once she gets back (in five days!).
There have not been many cookbook entries, either. I have been eating boring things like spinach/random greens wraps, quesadillas, oatmeal, and the odd frozen meal. And sushi like I had last night (I gave the piglet one a piece, too… she was purring all night afterwards). The wraps are actually very tasty, but not interesting enough to put in the cookbook. Although, I could see how I could make them cool and elegant, but that would take more effort than I usually want to deal with considering I have been eating dinner at around 11pm.
