i actually made dinner today… that is, did something more than eat pringles, eat ramen, or the like. i used to cook a lot more than i do now, but commuting from ithaca and buffalo seemed to have sapped my energy for such things. regardless, tonight amanda and i had a mushroom, tomato, basil, and cheedar fritatta on a bed of arugula with cantelope, crusty bread, and brie. and with a wine wine and balsamic reduction. a random ingredient list follows:
fritatta:
2 small onions
10 garlic cloves (they agree with me if they are cooked)
lots of cremini mushrooms
3 chopped tomatos (drainned to get rid of some liquid)
lots of grated cheddar cheese
lots of fresh chopped basil
green onions
7 extra large eggs
salt
black pepper
other:
reduction of pinot blanc/riesling and balsamic vinegar
arugula with xtra virgin olive oil/white wine vinegar vinaigrette
crusty bread slices
canteloupe balls
2000 trimbach pinot blanc (alsace)
it was pretty good. i think i’ll watch koyaanisqatsi now.
